Mmmm...sweet potato casserole

For the first time in the 3-1/2 years that we've been married, Joy cooked me my all time favorite food in the whole world...sweet potato casserole.


Now, I don't just like any old sweet potato casserole. I like other sweet potato casserole's, but to be my favorite it has to be my mom's recipe that I think she got from an old friend. No marshmallows. No pecans. Just a nice, crispy brown sugar topping. Mmmmmmmmm...


And I have to say, Joy did an incredible job. This casserole was waiting on me when I got home from work on Friday afternoon, and it was gone by Sunday afternoon. She might have gotten a couple of bites, I don't know. What I do know is that it was delicious.

I love my wife!

Strawberry Pie

Joy didn't just spend all day yesterday driving around to McDonald's and Dunkin Donuts getting free chicken biscuits and iced coffee. She also found a little time to make me one of my favorite desserts...Strawberry Pie.

And I must say...it was delicious!

One sign Spring is here...

Fired up the grill for the first time in a while tonight. Great weather, great steak, and Joy made a great salad to go with it...who could ask for more?

My Famous Pecan Pies

I just found out (from a family member) that I was famous for my pecan pies. I didn't know that I was famous for them. Anyways, I have already started making them for Thanksgiving. I just thought I would share my recipe. Happy baking...
  • 1 cup KARO light corn syrup
  • 1 cup sugar (scant cup)
  • 3 eggs, slightly beaten
  • 2 Tbsp margarine, melted
  • 1 tsp. vanilla
  • 1 1/2 cups of chopped pecans (south GA pecans)
  • 1 (9 inch) unbaked/frozen deep-dish pie crust
  1. Preheat oven to 350 degrees.
  2. Stir the first 5 ingredients until blended. Stir in pecans. Pour into pie crust.
  3. Bake 45 minutes. (Do NOT overbake.)
  4. Cool and Enjoy!
